Production & Processing

1. Raw Material Selection

Fresh, mature coconuts are selected from trusted plantations. Only clean, sound nuts are used to ensure consistent quality and flavour.

2. De-husking, De-shelling & Paring

The coconuts are de-husked and de-shelled. The brown testa (outer skin) is carefully pared to obtain clean white kernel meat, minimising husk or shell specks in the final product.

3. Washing & Blanching

The white kernel pieces are thoroughly washed in potable water to remove foreign matter, then blanched under controlled conditions to reduce microbial load and improve food safety.

4. Shredding / Milling & Drying

The blanched coconut is shredded or milled into the required particle size (fine, medium, extra fine, etc.). It is gently dried using hot air dryers at controlled temperatures to reach the target moisture level, typically below 3%.

5. Sifting, Metal Detection & Final Inspection

The dried product is sifted to achieve uniform particle size, passed through metal detectors, and visually inspected to maintain strict standards on specks and foreign matter.

6. Packing & Storage

Finally, the desiccated coconut is packed in food-grade multi-ply bags with inner liners, sealed, palletised, and stored in a cool, dry warehouse ready for shipment.
